The big freeze! Mini burgers with honey glaze

INGREDIENTS

FOR THE TOPPING

● 2tsp vegetable oil

● ½ red onion, peeled and finely chopped

● 400g (14oz) beef mince (not pre-frozen)

● Pinch of dried oregano

● ½tsp English mustard powder

● 1½tsp tomato ketchup

● 1tsp Worcestershire sauce

TO SERVE

● 4tsp clear honey

● small burger buns or ciabatta bread
METHOD

1 Heat the oil in a small frying pan, then add the onion and stir over a medium heat until softened. Leave to cool completely.

2 Put the beef mince, oregano, mustard powder, tomato ketchup and Worcestershire sauce into a bowl and season with salt and pepper (don’t skip the salt completely or the burgers will be tasteless).

3 Mix it all together, then, using your hands, shape into 8 mini burgers.

TO FREEZE: Place on a single layer on greaseproof paper on a tray or board then freeze uncovered. Once frozen they can be transferred into a bag for easy storage in the freezer. To reheat, place the frozen burgers under a preheated grill for about 5 minutes, then turn them over and grill for a further 5 minutes or until cooked right through.

Warm the honey and brush over the burgers, return them to the grill for a further 1–2 minutes and serve in burger buns or ciabatta.
